Welcome to Café Soupé!
When designing the concept of Café Soupé, our goal was to provide a unique dining experience that focused on healthy choices
to further promote the theme of wellbeing and activity by our neighbors in CityCentre.
Café Soupé is open 10am-6pm, seven days a week. The bistro like atmosphere will entice you to sit and dine in the courtyard
and enjoy the ambiance.
Our menu is innovative and features a wide assortment of freshly made soups, salads, and sandwiches that are both tasty and
unique to the Southeast Missouri area. Additionally we offer quality coffee drinks, fountain beverages, packaged beverages
and fruit infused water. For those interested we also feature a limited selection of wine by the glass and bottled beer.
You will find our menu is unlike any other. The sandwiches and specials served are created with a passion for fresh ingredients,
herbs and spices. This attention to flavor and quality is particularly noticeable in Café Soupé’s offerings. We are delighted to
have a selection sandwiches comprised of distinctly different bread options, special recipe sauces and in house seasoned popcorn.
And of course, no café is complete without the wonderful brew of coffee, teas, and espresso drinks.
Let’s talk soup! Our menu will offer a daily selection of eight soups. Just to give you a hint of our variety, we have our everyday
favorites, Beer Cheese and Loaded Baked Potato Soup. Daily we also offer a vegetarian soup option, like our Broccoli Cheddar
and then 5 other rotating soup options including but not limited to our popular Buffalo Chicken , Corn Chowder, Italian Sausage
and Roasted Tomato Florentine, Chicken and Dumpling, Mexican Tortilla, Lumber Jack Vegetable, and a seasonal feature that changes
each month.
Sandwiches are served with a pickle spear and choice of our housemade seasoned popcorn or chips. Sandwiches will include a mix
of paninis, flats, pretzel bread, Wheatberry, and French Roll. Our selections include Smoked Brisket Panini, Zesty Italian Panini,
Roast Beef French Dip, Southwest Turkey Flatbread, Garlic Chicken Flatbread, Ham and Brie Panini, Chicken Salad on Wheatberry,
and Basil and Brie Panini. You can of course change your bread option to your particular preference. And each month brings a new
feature sandwich to try something new.
And for the kiddos we have a menu boasting classics such as grilled cheese, pepperoni flatbread, and even macaroni and cheese bites all
served with carrot sticks and popcorn.

Pamela Dodd Schlick joined PAJCO, Inc. in September 2011 as General Manager of Cafe' Soupe in the City Centre. Prior to
joining Cafe' Soupe, Pam worked for Chartwells Dining Services at Southeast Missouri State University for eight and half
years starting as a cook and then becoming a retail supervisor. She was responsible for many retail outlets and concepts
including the Beanery Cafe featuring WPB Starbucks commingled with an internally developed sandwich/bagel concept. Her
recent role included Olives with a menu that featured Mediterranean themed pizzas, flatbreads, and Panini sandwiches.
Pam has worked in food service for over thirty years mostly as a manager and even owned her own restaurant. She is a
graduate of Plainfield High School and Vo Tech. She is currently ServSafe certified and has had extensive on the job
training through her career.
Pam really loves BBQ and loved cooking food so much that she owned her own restaurant called "Ragin Cajun". One of the
things she most enjoys is the challenges that arise in food service.
Pam is very excited about Cafe' Soupe and the opportunities is presents. She likes to spend her spare time with her two
chihuahuas (Coco and Buddy) who also love food, and she also plays the guitar and loves music. I am very excited to expand
my horizons for Cafe' Soupe.
Lydia Sumner joined PAJCO Inc. in January 2011 as the Foodservice Director her first project is working on the foodservice
operations of Café Soupe. Prior to joining Café Soupe, Sumner worked for Chartwells Dining Services at Southeast Missouri
State University for eight years serving as Marketing Director and most recently as Retail Director. As retail director
she was responsible for 13 retail concepts.
Sumner has over sixteen years experience in the food service industry and is certified by the National Restaurant
Association as a Food Management Professional (FMP). She is currently ServSafe certified and also recognized by the
NRAEF as a ServSafe Proctor. Sumner received a BS in Marketing and MBA in Management from Southeast.
Community stewardship plays a key role in Sumner’s work/balance philosophy. She is a 2003 graduate of Leadership
Cape and a member of the Chamber of Commerce as well as Chamber Young Professionals. She is a member of the Cape
Girardeau Jaycees since 2003 serving in various roles including President, Treasurer, and chair of BBQ Fest.
Incidentally, she met her husband Trevor Sumner through Jaycees. They were married in 2010 and are both self
professed "foodies" that love to eat! They currently are on a mission to eat in all 48 states and to find "the best" tiramisu!
Lydia enjoys cooking at home and tries to keep a balance of healthy and comfort food. So far her best known dishes
according to her husband are lasagna with bacon and her balsamic pork chops.
Lydia is very excited about Café Soupe and feels it is really a smart food concept with unique flavors. "I think I
will be eating a lot of Caprese salad, pretzel bread, and creamy onion soup," says Sumner. "I love what I
do because food is integral to life and is very personal. It’s not just about the food it’s the entire experience
that makes memories."

Our Neighbors
City Centre, formerly known as the Rust & Martin building. City Centre will be have an environment that is interactive and
promotes family wellness and togetherness as demonstrated in its tag line: "EAT, PLAY, LIVE". The City Centre will have a
downtown European market atmosphere with an indoor courtyard and fountain at the entrance and several distinct merchants.
The City Centre’s merchant list currently consists of LeBounce, The Source-Yoga’n More, and Café Soupé all which work together
to focus on family activity, well being, and eating well.
LeBounce opened on Saturday, January 29, 2011 and will be open seven days
a week from 10am-6pm. LeBounce is an indoor inflatable play centre for children of all ages. LeBounce is designed to be a sophisticated
play centre that is not only clean and safe,
but also fun for the whole family. With over 6000sq. foot of inflatable fun, complete with a 400 sq. foot toddler zone, parents
lounge and special private party rooms. LeBounce food offerings include: pizza, chicken fingers, chicken quesadillas,

"the Source-Yoga’n more" opened its doors on Monday, January 31, 2011 and is a
mind and body studio for all ages and abilities. The studio will be open seven days a week however hours will vary
according to the class schedule. We are devoted to helping people relax, unwind, and move in a soothing and conveniently
located space. "the Source-Yoga ’n more" provides a wide variety of Yoga, Pilates, Dance, QiGong, Tai Chi, and
meditation classes, as well as private sessions, for practitioners of all ages and abilities. Our mission is to give
students an opportunity to look within, refocus, and regain a sometimes lost sense of foundation and perspective. We take
particular pride in our programs for beginning Yoga students, children, athletes, seniors and people in need of physical, mental,
or spiritual reclamation of self all of which feature our approach: safe, compassionate and skillful teaching.
